Ingredients

The chicken marinade:

  • 600g cubed chicken breast (You can use Chicken Thighs instead for better flavour)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp chilli powder (optional)
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1/2 lemon juice
  • 50g fresh cream
  • 1 tablespoon ghee

The butter chicken sauce:

  • 20g light butter 
  • 1 medium onion sliced
  • 2 large tomatoes chopped or 1 canned
  • tomatoes (400g)
  • 20g cashew nuts 
  • Season again with paprika, cumin, turmeric,
  • chilli powder, salt, garlic, garam masala
  • 100g fat free yogurt 
  • 1/4 or 1/2 cup pasta water

Pasta:

  • 200g uncooked penne pasta

Method

STEP 1

Start by cutting the chicken into cubes then add all the spices with lemon and yogurt then mix till combined and let this marinate for 30 mins or more.


STEP 2

Meanwhile slice onion then get a pan on medium heat, add ghee, cook onions for 3 mins then add tomatoes, extra seasoning and cashews then mix, cook for 5 mins then add cream and mix.


STEP 3

Let the mix cool down and start cooking the pasta. Then add the mix in a blender cup and blend till completely smooth.


STEP 4 


In the same pan cook the chicken for 4 mins each side then add the sauce with the cooked pasta. Give it a good mix then garnish with coriander and distribute into 4 equal servings & ENJOY!
