Ingredients
The chicken marinade:
- 600g cubed chicken breast (You can use Chicken Thighs instead for better flavour)
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp chilli powder (optional)
- 1 tsp turmeric
- 1 tsp garam masala
- 1/2 lemon juice
- 50g fresh cream
- 1 tablespoon ghee
The butter chicken sauce:
- 20g light butter
- 1 medium onion sliced
- 2 large tomatoes chopped or 1 canned
- tomatoes (400g)
- 20g cashew nuts
- Season again with paprika, cumin, turmeric,
- chilli powder, salt, garlic, garam masala
- 100g fat free yogurt
- 1/4 or 1/2 cup pasta water
Pasta:
- 200g uncooked penne pasta
Method
STEP 1
Start by cutting the chicken into cubes then add all the spices with lemon and yogurt then mix till combined and let this marinate for 30 mins or more.
STEP 2
Meanwhile slice onion then get a pan on medium heat, add ghee, cook onions for 3 mins then add tomatoes, extra seasoning and cashews then mix, cook for 5 mins then add cream and mix.
STEP 3
Let the mix cool down and start cooking the pasta. Then add the mix in a blender cup and blend till completely smooth.
STEP 4
In the same pan cook the chicken for 4 mins each side then add the sauce with the cooked pasta. Give it a good mix then garnish with coriander and distribute into 4 equal servings & ENJOY!
