Ingredients
For the chicken marinade:
- 300g raw chicken breast (cubed)
- 1 tbsp crushed garlic
- 1 tbsp crushed ginger
- 1 tbsp paprika
- 1 tsp garam masala
- 1 tsp turmeric
- 1/2 tsp chilli powder or as desired
- salt & pepper as desired
- 1/2 lemon juice
- 50g yogurt
The creamy sauce:
- 15g natural ghee
- 1 onion sliced
- 1/2 tsp of each seasoning used earlier
- 15g cashew
- 2 large tomatoes chopped
- 50ml fresh single cream
- Garnish with fresh coriander/cilantro
Serve with 140g Basmati Rice per serving
Method
STEP 1 - First slice the chicken into cubes then marinate with the listed ingredients for the chicken. Mix till the colour changes then set aside
STEP 2 - Get a pan on medium heat, add natural ghee, sliced onion with the same seasoning used earlier. Cook for 2 mins, add fresh chopped tomatoes, cashew nuts, and cream. Mix till combined.
STEP 3 - Let the mix cool down for 5 mins before adding into a blender cup then blend in 10-15 seconds increments till smooth and creamy
STEP 4 - Back to the pan, cook the chicken for 4 mins on high heat then lower the heat and add the sauce. Mix and simmer for another 2-3 mins
